Who wouldnt love a soup thats both yummy and rich in vitamins?yes,you heard me right- there’s one such soup thats not only delicious but also super quick to make!That soup is none other than Lemon Coriander Soup.
I made it yesterday and it turned out to be a super delicious – light,refreshing and full of flavour.
So,lets dive into the recipe!
Ingredients needed to make the soup are :
*1 tbsp of oil or butter.
*2 cloves garlic & small inch of ginger finely chopped.
*1 small onion finely chopped
*1 small carrot and some beans finely chopped
*1 tbsp finely chopped coriander stems.
*some amount of water.
*1 tbsp cornflour mixed in 2 tbsp water.
*salt and pepper to taste.
*Lemon Juice (half lemon)
*2 tbsp chopped coriander leaves.
Method to make the soup:
*Heat oil or butter in a pan.
*Add garlic and ginger and saute for a minute.
*Add onion and saute for some time.
*Add carrot,beans and coriander stems and cook for 2-3 minutes.
*Pour in water or stock bring it to a boil and simmer for 5-7 minutes.
*Add cornflour mix and stir till slightly thick.
*Add salt,lemon juice,pepper and coriander leaves.
*Mix well and serve hot.
